  The crunchy yogurt bowl  Do you like a quick, easy, delicious breakfast? I know I do that, which is why I have come up with this recipe. It is healthy, at least a bit, quick, and easy.  It combines high-protein yogurt with antioxidants, vitamins C, and fiber-filled strawberries. Ingredients 1/3 cup organic whole milk plain Greek yogurt 4 large organic strawberries  1/4 cup organic sprouted walnuts  2 tablespoons mini dark chocolate chips  Directions  1. Place yogurt in your bowl 2. Top with washed strawberries, walnuts, and choclet chips 3. Get a spoon and enjoy Notes  I wash my strawberries in  Lugols' Iodine  to make sure there is no harmful bacteria I soak walnuts in warm water, which makes them taste fresher  I used Stonyfield yogurt

Roasted Asparagus

  Ingredients One bunch of organic asparagus Two tablespoons of organic extra virgin olive oil A pinch of Celtic salt Directions 1. Trim stems off of asparagus, just enough so that you can chew it 2. Rinse  3. Place them on the pan and dress them 4. Bake at 350° Fahrenheit for twenty minutes Notes  I suggest using parchment paper under the asparagus so it does not stick to the pan.  One trick is to snap the Asparagus stems off, but this takes more than just the fibrous part off, so I am not a fan. 

Arugula and mushroom omelet

 Arugula and mushroom omelet   Ingredients 1 organic free-range egg 2 tablespoons organic grass-fed full-fat cow's milk 1/2 a cup of organic baby arugula 2 small organic button mushrooms a drizzle of organic avocado or organic extra virgin olive oil two pinches of celtic salt Directions 1. Remove gills and r inse mushrooms to remove debris 2. Thinly slice mushrooms 3. Lightly sauté mushrooms and arugula with your oil of choice and Celtic salt, on low heat 4. Crack egg in bowl, check for shells, add milk, whisk lightly, until egg yolk is broken but not going to become rubbery 5. Pour egg mixture on top of sautéed vegetables. If the vegetables have lost a lot of their water content, you can pour it off or soak some of it up with a paper towel before putting the egg mixture in the pan. Notes I use an 8' stainless steel pan I use a cover to help the egg cook and not brown Enjoy, E

Overnight oatmeal

  servings; 2 Ingredients 2/3 cup organic gluten-free rolled oatmeal 2 tablespoons organic chia seeds 2 cups almond milk  1/3 cup organic grass-fed yogurt  2 tablespoons organic A-grade maple syrup 1/2 teaspoon organic vanilla extract  You can top with organic fresh or frozen berries/fruit, seeds, nuts, cinnamon, or low-sugar chocolate chips.   Directions Combine all ingredients in a leak-proof jar and store in the fridge overnight. Chocolate triple berry smoothie

This smoothie is the perfect combination of sweet chocolatey goodness and creamy sensation in your mouth. Combining sweet fruit with cream and cold almond milk, this smoothie is the perfect breakfast or midday snack.  Ingredients 1/3 cup organic frozen cherries 1/3 cup organic wild frozen blueberries 1/4 cup of organic frozen strawberries  1 cup of unsweetened almond milk  1 medium-sized banana  1 scoop of your favorite protein powder (I use Truvani unsweetened) 2.5 tablespoons of cacao powder Directions Place all ingredients in a high-power blender Blend  enjoy!! :) Enjoy, E Note: I place the banana and milk at the bottom of the blender to make it easier on the blender. I like my smoothies thick.  This recipe is high in protein and has 25 mg of vitamin C.
